Broccoli Basil Quiche with Herby Cracker Crust

This is a quick and easy recipe for a light dinner. Go ahead and experiment: use whatever veg. you have on hand.

For the Crust:
Combine, roll into a pie crust, and place in a pie dish greased with olive oil:
- c. whole wheat flour (or 1/2 oat flour for a lighter crust)
- 1/2 c. water
- 1/4 c. olive oil
- 1 t. Kosher salt
- 1 t. dried rosemary or thyme

For the Quiche:
Lightly pulse in the blender:
- 1 small head of broccoli
- 1 tomato
- 1 c. milk
- 4 organic brown eggs
- 1-2 c. shredded cheeses of choice
- 1 t. Kosher Salt
- 6 leaves fresh basil

Pour into pie crust and bake at 400* for about 20-25 min. -Until knife inserted comes out clean. Let cool and garnish with fresh basil. Serves 6-8.
