Ginger Carrot Egg-Rolls with Zesty Lime Soy Sauce

My siblings loved these. ;-D

Ginger Carrot Egg-Rolls

Saute in a little canola or peanut oil until almost cooked:
  • 1 chicken breast, cut into bite-size pieces
  • 1 bunch of green onions, chopped
  • 1 t. fresh shredded ginger root
Add, and saute until chicken is fully cooked:
  • 1 lb. shredded carrots
  • 1/4 c. soy sauce
  • 1/4 c. rice or apple cider vinegar
  • 2 T. brown sugar
  • 1/2 t. salt
  • red pepper to taste
Roll 2-3 tablespoons of filling in egg-roll wrappers with 1 parsley leaf per roll.
Lay finished egg-rolls in a casserole dish greased with canola or peanut oil
Bake at 350* for 15-20 minutes. Turn and bake for 15-20 more minutes.

Serve with brown rice and Zesty Lime Soy Sauce. Serves 6-8

Zesty Lime Soy Sauce

In a small saucepan, bring to a boil and stir until thickened:
  • 1/4 c. soy sauce
  • juice of 1 lime
  • 2 T. ketchup
  • 1/4 c. brown sugar
  • red pepper to taste
