Gyro Wraps

  • egg lightly beaten
  • 6 chives garlic minced
  • 3 Tbsp dried oregano
  • 1/2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 lb. lean ground lamb
  • 1 lb. lean ground beef
  • whole wheat pita rounds
  • 3 Tbsp extra virgin olive oil divided
  • 16 tomato slices
  • 2 cups shredded lettuce
  • 1 small sweet onion sliced
  • tzatziki sauce see recipe here
  1. In a large bowl, combine egg, garlic, oregano, salt, and pepper.
  2. Crumble lamb and beef over mixture; mix well with a fork.
  3. Pat gently into an un-greased 9"x5"x3" loaf pan. Bake, uncovered, at 350 degrees for 60 to 70 minutes or until no pink remains and meat thermometer reads 160 degrees.
  4. Cool completely on a wire rack.
  5. Wrap in heavy-duty aluminum foil and refrigerate for 1 to 2 hours.
  6. Cut chilled meatloaf into very thin slices.
  7. In a large skillet, fry meatloaf slices in 2 tablespoons of olive oil until they begin to crisp.
  8. Brush pita rounds with remaining olive oil. Broil until warm or heat in skillet for a minute on each side.
  9. On each pita, layer tomato, lettuce, onion, and meatloaf slices. Top with tzatziki sauce.
  10. Carefully fold pitas in half and serve with extra tzatziki sauce.
