Super easy and super delicious!
The mint is amazing in this.
1/4 c. panko
2 T. chopped fresh mint
2 T. chopped fresh parsley
4-oz. goat cheese
4 (6-oz.) chicken breasts
1/2 t. kosher salt
1 T. olive oil
Combine first four ingredients in a small bowl. Cut a horizontal slit through thickest portion of each breast half to form a pocket. Stuff 2 tablespoons cheese mixture into each pocket; close opening with a wooden pick. Sprinkle chicken with 1/4 teaspoon salt.
Heat griddle to medium-high heat; add 1 tablespoon olive oil to griddle. Add the chicken to the griddle, and cooked until browned. Turn, and grill until chicken is cooked.
Caroline and I made this tonight and it turned out really well. We doubled the recipe. We will definitely be making this again.
