Oven-Roasted Sweet Potatoes and Red Onions

These are so simple! Prep them ahead of time, then throw them in the oven while working on the rest of the meal.

2-1/2 lb. sweet potatoes (about 4 med.)
2 red onions
2 garlic cloves
2 T. olive oil
1/2 t. salt
1/2 pepper

Preheat oven to 425*. Combine all ingredients in a 13x9in. baking dish. Bake for 35 minutes, or until tender, stirring occasionally.
